In 1886 Schiller opened George, father of Fritz and owner of a brewery, an establishment on the Damrak. George, a hedonist and artist at heart, entertained guests with songs and guitar music. He gathered around him an artistic audience and the evening was much philosophizing, singing and dancing.

Business went so well that in 1892 a second branch was opened at the Rembrandt square on the site of the current NH Schiller Hotel. Young Fritz (1886-1971) had an artistic streak. His father sent him to art school because of his great talent for painting. Fritz learned the hotel business as a young companion at the Grand Hotel Krasnapolsky, the cafe business he was taught by his father.

After the death of George Schiller in 1907 his children Fred, Elsa Hein contunued the hotel. Frits Schiller was able to combine work and study well. His friends called him "the greatest hotelier among the greatest painters and painter among the hoteliers. The current NH Schiller Hotel is built in 1912. Despite several renovations in the building many original features preserved.
