 "For seven years I get the inspiration for our dishes from the area where I reside, West Friesland. I love the challenge of a variety of local processing in the menus that we prepare and serve in Brasserie Schiller.

We work with fresh herbs, fair meat products, and of course there are also seafood and shellfish dishes on the menu.

With the use of Dutch ingredients in our French-Mediterranean cuisine in Brasserie Schiller I feel very comfortable. The possibilities are endless and while I put my team together with an emphasis on creativity, taste and innovation for the guests of today and tomorrow.
